The quality of your cooking often depends upon the implement you use to cook it in. The pan or pot has many different designs and sizes, and it requires the cook to get to know how and why they work. Our job is to advise you on the best pan for the job. This means that we rely upon you to tell us what it is you generally like to cook and your favourite methods. As with knives, we do not suggest you kit yourself out with a whole range of gleaming saucepans, a number of which you may never use. We do, however, show you pans of real quality which will give you pleasure for many many years. We don't deny that good pans are expensive. They are. More the reason you take care when choosing. And avoid thinking you have to buy a complete designers set. We would rather sell you a single pan and have you visit us again next month or year if you need to expand your range.
The most popular pots these days are the ones that can be used both on the hob or in the oven. Not only are they versatile, they generally look good enough to be presented on the table. Hence the term "oven-to-tableware". Because of this, you will find here at "La Cuis", we favour the enamelled cast iron pots. They tend to be the first choice for braising, stewing and pot-roasting.
Having said that, other pans that are extremely popular deserve more than a mention. Stainless steel brings a sophisticated look to the classy kitchen. The better quality pans give you good heat distribution and can also be used on the hob and in the oven.
The other type of pot is made of clay, which is, of course, the ancient method of cooking. A recent popular dish from North Africa that demonstrates the use of clay is the Tagine.

A tagine is a dish made from glazed clay, which has a lid like a pointed hat, allowing the steam to circulate inside. All recipes cooked in this type of dish are also called tagine.
